I'm getting a lot of moisture on and around the windows in my bed area (Scamp 19 over the 5th wheel). Can anyone tell me the best way to eliminate this problem??

We get that in our 13' as well. The colder the night, the more condensation. Breathing increases humidity, cold air holds less water vapor, and cold windows tend to condense out the water vapor.
Circulating the inside air (such as running the A/C fan only), venting some air (Maxxfan lid open, no fan running), and heating the air all helped to prevent or minimize it. We have a small de-humidifier for storage, but it didn't seem to have much affect on window condensation while camping.

its from the breathing if you have it sealed up. either crack a window or the top hatch, or just wipe down the windows every morning after you wake up and then pop the top hatch or windows. if anything it's a great sign that shows it's sealed up well keeping all that in the trailer and not leaking out.

Cooking and invented heaters can also be a large problem.
yes good point cooking in the scamp will fog her up as well. i cook outside, just bring a folding table and a 2 burner coleman stove, i'm cramped in the tiny scamp kitchen anyways. i found a hack on here to put feet on a cutting board and put that over the stove in the scamp, bingo, more space for food/groceries or whatever you want.
