I would use 3/4 pvc pipe and joints all kinds of which are available at HD or similar. My thoughts would be to put the bed down on the side dinette and then custom build with the pvc so that it fits right in there but can be removed to return the dinette to normal use...
You could easily fashion some type of securing system so that it would not accidentally come out, but would be simple to remove later or when not using it.
This is an example of a pvc pipe bunk bed I did to give you some ideas. Removed it later when it was time to sell and trailer was right back in original condition.
