I would prefer either he Scamp company or a trusted RV center to install the fridge. A outside acces must be cut for rear maintenance of,the fridge, no small task! I would never approach this myself. Glad our 16 came with everything!
Running the sink drain into the black water tank is a great idea for an older std. front bath Scamp 13 for on the road stops like Wal Mart or Flying J. Since the drain lines ae 5/8" you can put a 5/8 garden hose Y valve in the drain line and divert the sink drain to an outside tote while camped. I put a grey water tank in a S-13 like yours. It cost about $200 to do W/O shipping and it took about 4 hrs. to do working alone. Since you don't have a shower not having a W/H is not a big deal, an electric tea pot or tea pot on your range will supply all the hot water you should need.
As for the frig. I don't think you would ever get a return on your investment. I would use the trailer like it is and see if you can live with it. You should not have a problem getting your money back if things don't work out once the weather warms up. My guess a W/H, holding tank and frig install is going to cost you about $2K if you have some else do it.
I am still amazed at the resale value of used Scamps! It doesn't seem like the used 16' is a good deal, but time will tell. I am also amazed at how FAST the fairly-priced units sell. We bought ours the first day the ad came out, the buyer had two other out-of-state people in the wings, it was the Friday before July 4th weekend, and the sellers insisted on cash only. My husband was not happy doing that, but we got our Scamp! Good luck shopping, and know that even in this off-season if you see the one you want be prepared to jump on it. We were really, really lucky as it was only 100 miles away.
We sold our Scamp to the first interested party for a good price, and they got a outstanding Scamp, very updated and well kept. They got a great deal and so did we. We shall miss our Scamp in many ways but it was time for more room, and modern features Scamp will not produce.
We bought our 2002 16 ft deluxe in sept 2014 on Ebay for $11000. It was in storage for 10 years. Had to drive 200 mi to pick it up. I feel like we got a good deal.It came with new wheels and tires. electric tongue jack. new 27 ser battery. This will be our last trailer. I'm 73 and slowing down a lot.

Thanks to everyone for good input.
I have heard that Camping World does a fair job of fridge installs. Check it out.
