Figuring out water layout for gutted 16' scamp

Trying to understand a basic layout for running freshwater lines in gutted out 16’ scamp trailer 1996 (see attached layout).  Would like to have 12—16 gal. fresh water capacity.  Thoughts are to have two 6—8 gal tanks (each positioned on either side too distribute the weight) connected with tubing.  1 Tank would be easier, would just have to distribute weight.  Would tank #1 (on fresh water fill side) need to be slightly higher positioned than tank two so that gravity helps drain tank 1 into tank 2 ?  From tank two, tubing with one way valve connects to water pump then sends water to faucet/sink.  Not sure of how city water vrs tank gets selected from faucet? My guess city water connected to one faucet tube/ fresh water tank to other line?  Guess I would have to drill hole in floor and set fittings to drain tank two (tank 1 drains into tank 2 by gravity)?  Not sure how sink drains, again guess would be out through hose from fitting in side of trailer marked drain outlet.  No grey tank, will bring one of those portable dump tanks with wheels.  Do not have water heater, intrigued by the portable LP tankless water heater, does not look like they are for inside scamp though.  Any thoughts would be helpful

Thoughts

Traditionally Scamp is setup with a single tank under the Pass side bench with the pump in that location. I understand the thought process behind distributing the weight, but you give up a tremendous amount of underbench storage if you put tanks on both sides, not to mention all the flow issues that have to be resolved. Filling dual tanks from one fill location could create a lot of issues as well. Weight distribution can be easily taken care of by putting heavy items in the storage area of the driver side bench if desired. IE flat of bottled water. However, the standard fresh tank configuration has never led to any weight distribution issues as far as I've heard or experienced.

I put dual bar faucets in my Scamps and hook onboard to hot side and city to cold side. If no grey tank then hose out the drain outlet is standard on 13's. I use the Reliance 941003 Aqua-Tainer Water Container - 6.5 Gallon Capacity for grey tank since National Parks require sealed containers.

Thanks greg for the comments,  1 tank will be much easier.  Do not plan on traveling with full water tank anyway, usually fill up at/near site. Is my plan to cut hole in floor the best way to go?  As mentioned, I do not have a water heater, but the open floor plan leaves alot of options.  Just purchased a small dometic 3 way fridge to install.  Will need to consider if I want to put in water heater before I run LP line.  Heard of people using spray nozzle faucets, then sticking sprayer out side window for shower/dishes.  Anythoughts on attaching outdoor faucet set up -- most camping experiences we do not use sink inside to do dish anyway.

Holes

You should already have all the necessary holes in subfloor on Passenger side for the water tank. Just setup the pump behind the tank and then run the water line around the aft end under the liner and up the drivers side. This is a 13, but pretty standard Scamp onboard water setup. I also go to the steel braided hose when I put water lines back in. Just a bit of peace of mind. The only hole through the subfloor is on the front of the tank for the drain line and may be one for the overfill if you have it. the braided line tucks under the liner to run over to the passenger side.

Flooring has been redone.

Flooring has been redone.  Looks like two old hoses came out driver side.  No biggy can cut new hole for drain.  Not sure what you mean by running the water line under the "liner". Looking at 16 gal fresh water tank on ebay (free shipping)  looks like I'll need a pump (size needed?  best pump for the $ ideas).  Looks like fittings should be able to pick up at local big box store.  Have not found site that sells whole kit together with free shipping.  Imagine I need to keep the sink drain higher than drain outlet on outside of camper to get good drainage.  Have been on this site and youtube trying to figure all the ins and outs.  Thanks for the help.
