Removing/Replacing the Vent Hood Fan Assembly

I've read on the fiberglass RV forums of people removing that massive vent hood fan assembly and replacing with smaller fans.  As is, you can't even work on the back burners if you're tall because that hood blocks the view.  i'd have to be all crouched over.  I saw where one person took 2 computer fans and made a metal cover for them and mounted them to the wall with the vent opening, used the existing 12V electric line to power them.  It cleared that whole space but still there were fans in case you needed them.  I checked the Mod Sticky Page and didn't see anything like there here.  Just wanted to see if anyone has done this and if so any tips/suggestions etc.
