Removing and replacing the top bunk is real easy. Just get a portable drill with a phillips screw insert. There are 4 screws on each hinge, two from the front and two coming up from the bottom. Just flip up the bunk and power them out.
When installing them again, set the clutch so that it slips when the screws are snug and it doesn't drive them in real hard and strip the holes.

We have the side dinette set up. All cushion covers are now replaced.

Curtains were done in 1 day, the cushions took about 2 weeks.
