I have a 2005 scamp 19 that I pull with a 2006 tacoma 4l v6. I'm in eastern Washington and regularly cross the cascades with this combination. That is plenty of truck to safely do the job. If you do not have the tow package I would recommend having a transmission cooler added. (assuming you have the automatic transmission)
IMHO a fifth wheel is much easier to pull than a bumper pull, although they are both easy to pull. You probably won't even know it is back there, just be aware that your vehicle is now longer for turning and lane changes. It doesn't take long to feel comfortable towing. Weight distribution is not as critical as it is in a bumper pull. You do not have sway issues to worry about. It is also much more maneuverable. I can do u-turns and get into tight camping spaces much more easily. OK the smaller fiberglass trailers aren't that hard to tow or park either.
When you look at the 2011 make sure all of the appliances are in working order. It is only 10 years old so I would be surprised if they were bad but they can be expensive to repair/replace. I would look at the tires and see how old they are. If the tires are still original i would recommend replacing them even if they still have plenty of tread. There is always a debate when to replace tires, but usually 7 years is a about the maximum life span. It might be a good time to have the bearings serviced if it hasn't been done recently. This is easy to do yourself. There are also a lot of mechanics out there who can do it fairly inexpensively.
Getting the hitch installed in a Tacoma can be a challenge due to the composite bedliner. There are several excellent threads with photos in this forum and in fiberglass rv forum that address this issue and offer good advice.
